I don't know PJ .... it is an ancient secret passed from Druid to Druid :-)

Recipes do vary a little, mine is a bit on the sweet side:

8oz flour
4 oz butter
4 oz castor sugar
2 oz currants
quarter teaspoon mixed spice
pinch of salt
1 egg, beaten with a little milk.

Sift flour, spice and salt together. Rub in the butter until it looks like breadcrumbs. Add sugar and fruit.

Add a little of the egg / milk mixture to make a firm paste -- be careful as a little mixture goes a long way !

Roll out to about quarter inch thickness and cut into 2 inch rounds.

Grease a griddle or thick / heavy frying pan ( I use a cast iron bakestone ) and cook on a gentle heat for about three minutes a side, until golden brown.

Sprinkle with castor sugar and allow to cool.

Don't tell the druids, but I sometimes replace the currants with sultanas or chopped glace cherries.

Mmm shame I am banned from sweet stuff now. If I am to save my remaining teeth my dentist banned fizzy drinks and sweets. I can have a 'treat' on a Sunday after my meal but must brush my teeth afterwards [:(]

I have lost 3/4 of a stone in 6 weeks!!

I don't bake, I like to keep the economy going by buying from other people!
