If you have young'uns running about at Christmas then the one thing you are going to need is a real Christmas Yule Log, and they aren't too difficult to make

Ingredients

70 g sifted cake flour
20 g unsweetened cocoa powder
5 g baking powder
2 g salt
100 g white sugar
3 eggs, separated
60 ml milk
15 g confectioners' sugar
90 g whipped cream
475 ml heavy whipping cream
224 g semisweet chocolate, melted
55 g butter, softened
15 g more confectioners' sugar
3 ml green food colouring
225 g marzipan


Method

1. Preheat oven to 175 degrees. Grease a 15x10-inch Swiss roll pan. Line with waxed paper. Grease paper.
2. Sift together flour, cocoa, baking powder, and salt.
3. Beat together sugar and egg yolks at high speed until light and fluffy. At low speed, alternately beat milk and flour mixture into egg mixture.
4. Using clean beaters, beat egg whites at high speed until stiff, but not dry, peaks form. Fold one third of beaten whites into batter. Fold in remaining whites. Spread batter in prepared pan; smooth top.
5. Bake cake at 175 degrees until set, approx 12 minutes.
6. Dust a clean cloth with confectioners' sugar. Turn cake out onto prepared cloth. Remove waxed paper. Trim cake edges. Starting with a long side, roll up cake, jelly-roll style. Transfer, seam-side down, to a wire rack to cool for 30 minutes.
7. Unroll cake; remove cloth. Spread whipped cream over cake to within 1 inch of edges. Re-roll cake. Place, seam-side down, on serving plate.
8. To prepare frosting, in a small saucepan, bring heavy cream, melted chocolate, and butter to a boil over medium heat, stirring vigorously until blended. Remove from heat. Let stand until set. Spread frosting over top and sides of cake.
9. To prepare garnish, dust work surface with confectioners' sugar. Knead food coloring into marzipan until blended. Using a rolling pin dusted with confectioners' sugar, roll marzipan to a 1/8-inch thickness. Using a small knife, cut out leaves. Arrange leaves, cinnamon candies, and snowmen on top of cake and around plate. Dust with confectioners' sugar.

[:D] You know me so well! I really am going to try some of these, it's about time I started baking and cooking. I made fudge once but it just tasted of pure sugar!

I used to bake all the time. I've made fudge and toffee, sweet stuff and savoury stuff. Can't be bothered to do it anymore and hubby has to be in the mood for cakes etc., so not much point as I would be the one eating it all (well you can't waste it can you?).

Hubby still reminds me (and I am sure he will bore everyone next weekend) with the story of when I made him his favourite Eccles cakes...........and forgot to put the currants in!!!!!!![:D] They were in the oven and I looked at the scales - and there they were just sitting there! He's not touched an Eccles cake since!

Mind you, hub did a good one last week - he made a cake, was fetching it out of the tin to put it on the cooling rack when he dropped it and it ended up on the floor, smashed! He had to make another one!

Mmmmm!!...Thanks Ray, Chocolate Log is yummy[:p],...must admit would leave Marzipan out though as it reminds me of Chrimbo Cake[:(]not keen, no Choccie in that!!![:)]

You can have my Marzipan then Jan[;)]...I'm still laughing at you leaving the currants out of the eccles cakes,that was so funny[:)]...and your hubby dropping the Cake...That's really made me laugh as well...sorry just my wicked sense of Humour..

[:D][:D]Ooh,another choccie recipe-yummy!!!I love yule log[:p]I'm not keen on marzipan either,or icing.I've always said that if we ever get round to getting married we would have to have a chocolate wedding cake[:p]One with about 5 tiers on it[:D][;)]!!!xx
